Dear Sir/Madam,

I have solid achievements in terms of high quality raw materials due to my initial training of Boucher / Charcutier / Traiteur which allows me to develop menus very varied.
Since my apprenticeship, I have been able to evolve in the big houses of my region in order to perfect my creativity and my technique.
This experience gave me the
Two years ago, I decided to invest fully in my passion for an food and to open a restaurant with one of my brother, the Brick & Brac. Fresh products from local producers, weekly menus, market races, allowed me to express myself fully in my values and my creativity.
My cooking is traditional but I strive to always bring a modern touch in it.
Within this two years, two private club were privatise it once a week. It is that last reason that gave me the experience to apply for this post.
Exercising my passion allows me to be extremely rigorous, serious and methodical in my work.
