I have at heart the desire to offer vibrant food. I prioritize independent farmers. As well as foragers, fish mongers, and winemakers who take organic and sustainable farming seriously.
I work with seasons. The best cookbook was written by nature.

Curiosity and traveling allowed me to work in a broad horizon of restaurants.

My journey started in a raw vegan restaurant in Montréal. I then worked for a Paul Bocuse alumni in Lyon.

Later, a celebrity hired me as their private chef in Paris.
Afterwards, I perfected my vegan cooking for a year in Amsterdam.
Following this, I moved to Copenhagen to work for Christian Puglisi, owner of the former Relae - 1 michelin star.

Eventually, I became the head chef of Moment in Denmark, crowned by a bib gourmand in the Michelin guide in it’s second year.
My curiosity then led me to train and work as a sommelier, which gave me an in-depth understanding of how to pair food and wine.
